Knowledge and health — There are more than 300 types of honey in North America, each one the product of a specific combination of flower colors and varietals. For all of their differences, each kind is composed of 75% sugar (fructose and glucose), water, and vitamins and minerals.
Honey is a 100% pure product, and it’s very beneficial to our health, particularly when used as a substitute for sugar. However, when replacing sugar with honey in our baking, we have to use less to account for the relative richness of honey. For each teaspoon of sugar listed in a recipe, use only ¼ teaspoon of honey.
Honey and health — Research and experience have shown that the hydrogen peroxide in honey has an effect on ulcers and burns. To treat small cuts, a dab of honey serves as an antiseptic. In a few days, the cut will be healed.
